Piping techniques

Piping on the frosting is a simple way to create various fun effects. To cover the cake in roses, use a star piping tip. Hold the tip perpendicular to the surface of the cake where you want the center of the rose to be, then apply pressure to the piping bag while swirling outward. Gently release pressure once the rose reaches the desired size. Do not alter the angle of the piping tip to allow for the swirls to fold over onto themselves, creating more dimension.

 
 

Writing on cakes

Use a small round piping tip and practice on parchment before going for the real thing, applying even pressure as you go. Any practice frosting can be easily scraped off the parchment and reused. You can also trace the shape of your cake onto a piece of parchment and practice on that to ensure that correct spacing, centering and sizing of the letters.

2 Method Decorating Cupcake

– Starting at the edge of the cake, swirl the icing into the centre in one smooth circular motion, slightly overlapping as you go. Gently pull the bag away in the centre to form a peak.

– Starting in the centre, hold the piping bag upright and gently squeeze out the icing to form small peaks, pulling the bag away at the end of each peak to form a point.

Use Flower Nail

Place a small dollop of icing on the center of the nail to hold down an icing flower square. Start piping petals on the side of the nail closest to your fingertips. As you pipe, you will need to turn the nail to either complete the petal or add more petals. Turn the nail outward, away from your wrist, to keep adding more petals. Keep rotating until you complete a layer of petals.
